    Chive, Spinach Feta Biscuits/Scones (Vegan)

    Hey guys! Sorry I have not blogged in over a week! Work has been very busy! THANK GOD IT”S FRIDAY!

    So over the holidays I decided to kick the last delicious biscuit up a notch! I started throwing crazy things in my recipe and thank god it turned out! If you’d like to know how to make the above photos, keep on reading!

    !!WARNING!!: These biscuits are so delicious that I ate 17/20 in one sitting and the last 3 the next day!

    P.s. I know my recipe has ALOT of garlic, but i love it and don’t be frightened because it really does taste delicious and not too overwhelming.

    RECIPE - Yields 20

    4 cups of flour

    1 tsp of salt

    4-8 tsp of baking powder (different effects depending how much you use)

    3-6 tbsp of garlic powder

    1/2 cup of Earth Balance Butter

    1-1/2 cup of soy milk (or whatever milk you want)

    Spinach - as much to your liking

    Chives - as much to your liking

    Vegan Feta - as much to your liking. I apologize but i forgot which ingredient i used to make the vegan feta because i made it awhile back and thought why not use it in this recipe. There are many different vegan feta cheese recipes, so pick one to your liking and use it!

    Instructions: Prehead oven to 450 degrees

    Measure out 4 cups of flour and plop it in your bowl, then add salt, baking powder, and garlic powder. Mix it all up with a spoon or a fork.

    Now chop or blend your spinach until it is itty bitty pieces. I just chopped them really finely, (i used the basil leaf chopping method) and honestly, i did not measure out my vegetables because i enjoy having lots of veggies/spinach in my carb-y food, to kind of bulk it up alittle bit and make it alittle bit healthier. Once your spinach is in itty bitty pieces, leave it to the side.

    Measure out your butter and throw that into the bowl with the flour. Now use your hands and make it all crumbly!! Once the flour is incorporated with the butter, add in the chopped spinach, grab a bunch of chives and use your scissors to cut them into small little pieces. (I bought the packaged ones from sunterra and used maybe half of it)

    Then throw in as much of your vegan feta cheese into the bowl (if i eyeballed it i think i may have used half a cup?) and use your fork to mix everything around.

    Then add in first your one cup of soy milk and use your hands to generously mix it all in and make it come together. Then add in the last half cup and you should have a nice consistency/ALITTLE sticky dough.

    I then use an icecream scoop and i scoop little balls and place them on my baking pan. Once all mixture is evenly distributed, i used a flat spachula and pressed down the dough so that it is kind of flat rather than a big ball.

    I threw the pans into the oven and baked them for 15 minutes. At the 12 minute mark i grabbed alittle bit more earth balance butter (Table spoon) in a small bowl, added some minced garlic, a dash of garlic powder, oregano, Italian seasoning, pepper, thyme, and mixed it all together.

    Once my alarm went off, i pulled the biscuits out and smuthered ontop with the garlic spread that i just made and popped it into the oven for maybe another 2-3 minutes and then took them back out and demolished them!!!!

    Seriously! TRY THEM. So delicious <3 NOM.

    I also stated to my Vegan facebook group that I would share how i made coconut shrimp so it is as follows:

    VEGAN COCONUT SHRIMP

    Vegan imitation shrimp from Hearts Choices

    Unsweetened coconut flakes

    Flaxmeal (egg)

    Cornstarch

    1. Defrosted some of the shrimp. I made the flaxmeal mixture which is the same consistency as an egg. I added teaspoon of cornstarch in it to thicken it alittle more.

    2. I dunked the shrimp into the flaxmeal mixture and coated it, then threw it in the coconut flakes (which also has a table spoon of cornstarch) and then fried it in alittle bit of oil.

    3. Optional to sprinkle salt over it after it’s done frying but i didn’t. Serve it with sweet chili sauce and NOM NOM NOM!!

    Today I went to grab some food and while walking around I really wanted to try the “So Delicious” non dairy, vegan icecream and yogurt! I’ve been researching alot about coconut and the health benefits lately which is very intriguing but i was very skeptical because I don’t really like coconut.

    Well, these two products DEFINITELY proved me wrong! I tried the Vanilla Bean icecream first when i got back to the office. OMG DELICIOUS lol AND it’s sugar free! Win-win! This was seriously so good, I had to control myself or else i would have demolished that entire tub!

    When I got home from work I opened the Coconut Milk Plain yogurt. I tried a teaspoon of it on its own. It too was very good and smooth!

    Todays purchase was a good one, well spent and I am so pleased!

    Review

    So Delicious - Coconut Milk Vanilla Bean Icecream No Sugar

    5/5 - A+; I loved this, and honestly for a anti coconut person, this was honestly one of the best desserts ever. It was so smooth and creamy, it wasn’t too sweet which i love because I don’t really like sweets that much. I kept trying to figure out what it reminded me of but i still couldn’t. It almost tasted like one of those Chinese Soup Desserts which is very yummy. But this I would definitely recommend and buy again. It was literally that DELICIOUS.

    So Delicious - Coconut Milk Plain Yogurt

    5/5 - A+; I also loved this product. This was very smooth and i was so afraid that it was going to taste disgusting like normal plain yogurt. Normally with plain yogurt I’d have to at least put fruits in it so that taste isn’t taking over. I tried this on its own and was definitely impressed. It did have the texture like yogurt, it was very fresh and would really taste good with granola. This would make a very nice breakfast.

    Helloooo my sweetest V’s! Today is a day for reviews! This entire week has been insane so i haven’t had time to blog really. I tried putting everything into one post because I am kind of lazy this morning… and grouchy =( lol.

    This week I craved some WEIRD and random foods! All week actually I have really wanted to try this “Tofutti” cream cheese stuff! I saw it once at Sunterra but I never bought it.

    I went everywhere trying to find this because Sunterra is in the downtown core and I really hate going there after work because then I don’t beat the traffic. I actually wasted alot of time trying to find this god damn thing at other grocery stores: Superstore, Sobeys, Safeway, Walmart. Tofutti’s website STATES that safeway carries it but i couldn’t find it anywhere.

    I went down to Planet Organic and found it there! I was super excited as well that day I found these “Kamut Squares” they were SO SO delicious! I was so obsessed that the next day I went and bought ingredients to make my own!

    Anyway, so i buy the cream cheese, I go home and I’ve always wanted to try this “Cucumber Sub”. And I am so glad i tried it because it is delicious as well! I love cucumbers, it’s so refreshing and tastes good in practically everything! So i fixed myself up the cute little Cucumber, Avocado, Creamcheese, Greens Sub! How does that sound? Awesome right? Now if you’ve done your research, you know that if you spread the “cheese” or “sauce” or whatever you want on the cucumber that it would slide (i still don’t get why ppl do it even though they know it would slide) but i spread the cream cheese ON my greens so that nothing slid out. Simple.

    Mid week, our office decided all to go out for lunch. We went to Joey’s and whenever I go to Joey’s i would order the Chinatown Lettuce Wrap and get it as a salad. I haven’t been to Joey’s since 2 summers ago, so I kind of forgot what it tasted like and had to order it. I also got edamammes that day.

    Both these dishes were SO good to the point that everyone had to take a bite out of my lunch. I decided to home make this as well which was success! Brought some for my coworker and she loved it and thinks I did a better job than Joey’s.

    I really enjoy cooking my own food because I can control what i use and what i put into my food. I can guarantee that my version tasted better and was absolutely more healthy than eating it at a restaurant.

    All week i’ve craved JALEPENO PEPPERS as well! And since i have the vegan cream cheese, WHY NOT?! And let me tell you, these killers were SO BOMB! I can eat spicy food but the tip of these peppers were so spicy, i almost couldn’t handle it! My mixture was also different which bulked up and made the cream cheese taste better. I mixed garlic, vegan shreds, and green onions into the vegan cream cheese and stuffed the peppers. I dunked these peppers in mustard and then rolled them in Panko’s and baked them until done! YUM!

    Honestly, I am still on the search for cheese that can satisfy my cravings and work well with my recipes and in cooking. Daiya is completely out of the question, if you didn’t see my last review on the Daiya cheese, then go read it!

    I have been doing some research, others have different opinion on what cheese they like. I just so happened to be at superstore and looking at the vegan options and i decided to try the “Rice Vegan Cheese”. It comes in what looks like a 5x5 cube block. I think it sells for $4.99. Took it home and tried it.

    This definitely did not gross me out as the Daiya cheese did… This Rice Cheese actually tasted pretty good. I was skeptical at first because when i sliced the cheese it was so flimsy and literally cut through like jell-o or butter. lol but it actually tasted pretty decent, I would definitely eat it with some cucumber and crackers.

    Now, i’ve been trying to stay away from starchy and carby foods. So for the longest time I haven’t been eating rice nor bread. But I had to see how this cheese melts. I took a slice of our multigrain vegan toast, cut the SLICE into a half, buttered each side with Earth Balance, plopped it onto the stove with the cheese. Waited 5-9 minute for it to melt…. Not melted yet… Flipped it, so the other side can do it’s thing…. still not melted yet……… I was getting irritated so i took it off the pan, put it on a plate, microwaved it for 30 seconds, melted but not quite.

    Cut it into square pieces, you can tell that the cheese resembles…. Processed cheese, like it almost looks like that cheese you get from 711 on those nachos but after it sits awhile outside and gets cold. lol

    So all in all…………… This cheese does taste good but disappointed with the melting level =( SAD!

    Review

    Tofutti - Better than Cream Cheese

    5/5 (A+) - This was very pleasant and I could think of so many dishes here I can use this. The tub is quite small for the money you are paying for it, but well worth it. I know that Daiya came up with a cream cheese product too which has more selection in flavors, I might give it a go, i might not. But definitely Tofutti is the way to go!

    RICE - Vegan Cheese ( Cheddar)

    Taste: 3.5/5 - It tasted good, and I’d prefer this over Daiya cheese. It kind of has a taste like a step better than those Processed Cheese slices.

    Melt: 1/5 - It did not melt which was very disappointing and it resembles really nasty cheese whiz kind of thick plastic texture(visual) when “melted”.

    Vegan Cheese and Chive Biscuits
Hey guys! Does the picture above not look delicious or what?! Anywho, last night i made these biscuits and they were DELICIOUS! 50 calories for one but SO worth it. I&#8217;ll be making more today!
Normally I do not like biscuits because they are so oily or dry. These were so moist and dense and ooooooh sooo good! hehe
Recipe
2/3 cup of soy milk (I used the organic unsweetened soy milk)
1 tsp cider vinegar
1 cup flour (I used white flour)
2 tbsp coconut oil
1 tsp salt
1 tbsp baking powder
1 cup chives (optional of amount, if you like less could put half cup)
1 cup vegan cheese of your choice (optional of amount, if you like less could put half cup)
Directions: 
1. First measure out your soy milk and dump it in a bowl, next put your cider vinegar in the soy milk and let it sit for 5 minutes. You will notice instantly it&#8217;s starting to look like it&#8217;s going to curdle.
2. Measure out your flour, add salt, baking powder and mix briefly. Then add the coconut oil and you can use a machine or your hands. I used my hands. Mix in the flour etc with the coconut oil until you get a crumbly consistency.
3. Once you get that crumbly consistency and your soy milk has completed his time out for 5 minutes, throw that into your flour bowl.
4. Gently fold mixture, do not over mix!
5. Gently add chives and cheese and GENTLY FOLD everything until incorporated.
6. Time out - Let the bad boy sit in the fridge for 30 minutes
7. At this time, you can preheat your oven to 475F and start cleaning up your mess and washing dishes or doing whatever.
8. Once 30 minutes has elapsed. Take dough out. It will be VERY VERY STICKY.
NOTE: At this point, I used flour hoping that it won&#8217;t be that sticky. It did not help and i did not want to add too much unneeded flour because i wanted it to be light and fluffy and I got VERY frustrated. So i plopped the dough onto a long piece of suranwrap, folded the suranwrap over the dough and started pushing it down until it&#8217;s 1/2-1 inch thick. Worked like a charm!
9. Use a cookie cutter or whatever circular thing you have and cut the dough. Remember to cut it straight down and do not TWIST the cutter.
10. Plop those bad boys into the oven, bake for 14-17 minutes or until it&#8217;s golden brown and delicious looking and enjoy!
GOD DAMN, they were soooo good =P heheh Try &#8216;em out and let me know how yours turned out and if you loved them as much as i do!
P.S. I might make some today replacing the coconut oil with earth balance and see how it taste. I&#8217;m kind of new to coconut because i never liked it in the past. I loved these biscuits but the coconut oil really does over power it and you can taste in through the biscuit. So if you are someone who does not like coconut oil, i am sure you can sub it with earth balance.

    Home made dog treats!

    Yep, I woke up this morning and headed straight out to get ingredients to make my little loves some home made treats!  I couldn’t find any small bone cookie cutters which really sucked =(

    Anyway, as you can tell i got really lazy during scraping their names on their bones lol. So i stopped and baked them =P In the end it’ll get into their belly anyways but i think it is soooo cute that their names are on the bones =P

    I also grabbed a “boy cutter”, that was the name “Boy cutter” lol it looks like a mini gingerbread man =S crazy people! Anyways, i got one of those because THAT should be the size of their treats =( it’s cute anyways. For the left over dough, i just grabbed one of their store bought treats and i shaped it the same as those treats which was quite time consuming.

    Verdict? They loved it! It was so cute cause I let Noah lick the spoon when i FIRST started mixing. Normally when i’m “baking” or “cooking food for myself” Noah would hang around the kitchen but he would be by the couch and he would do his own thing. Today, the little guy seemed to know that Momma was baking him some delicious treats!! He waited and waited by the oven. lol Cutie.

    Both my lovables loved their treats! It was so cute watching them demolish it!

    I’m so happy that I can make their treats and monitor their eating. I want to know what is getting put into their body at all times! Plus i love baking!

So the secret of this vegan icecream! Drum roll please!!!!! …
Main ingredient is: CASHEWS!
Yes, this entire recipe consisted of only 6 ingredients: -cashews -water  -agave -vanilla extract -oats -vegan choco chips
He said the “cookie dough” tasted like cookie dough and because I told him the icecream was “whatever his mind wants it to be” and he wanted it to be vanilla that it threw him off cuz it tasted like cashews lol.
But it’s super delicious! Give it a go veganers!
